Changing software (newbie)

Hi, I've just bought a T-Mobile Samsung E370 phone, unlocked it and inserted and activated an O2 SIMM card. Fine so far. All this is so I can get the balance transferred from my old O2 analog phone that has now been discontinued (thanks O2).

However, my phone still has a T-Mobile operating system. How can I change this over to an O2 O/S?
